You gave a detailed requirement so it'll be easier to help you out. Since you are planning to kayak on small lakes and fish ponds inflatable will be a good option. The water is calm so there is nothing much to worry about. My first kayak was an inflatable and it was best kayak for beginners. But it wasn't a sit-on-top as i was not interested in fishing. So didn't care for cargo space. So, inflatable sit-on-top kayak for fishing is the right choice you made. Among the kayaks you have mentioned i would prefer Hobie Mirage the models i think you can choose yourself.
