Default Buying first kayak, need some info

I am looking to buy my first kayak, and don't know which model will suit me the best. I would like one that converts from a 1 seater to a 2 seater. I will be fishing in the Indian River in Fort Pierce, FL. Probably not much Ocean use. I'm not a huge guy, but I would like to take my gf out fishing on this with me, so the yak needs to be pretty stable. Durability is a must! Any suggestions would be great, thanks for the advise.

I wanted to buy a tandem also and was talked out of it. I later tried one with my son (OK Malibu) and glad I stayed away from that choice. If you are fishing it will be a problem. If you are just touring you have to be both very coordinated with each other. I saw two guys fishing off the Jersey shore and they had it together. They used the OK malibu. How they launched (surf) must have been interesting.
